Luis Olvera’s Trompo was a culmination of years of work, tinkering with recipes, mixed with lots of family guidance and hard work. In 2016, Trompo made it to one of Bon Appétit’s fifty best new restaurants of the year. Their ranking of the namesake dish as the best taco of 2016, affirmed “…Trompo as Dallas’s latest dining darling.” Olvera was featured in the book Tacos of Texas, and subsequently, the PBS miniseries. He continues his work in Dallas, TX by way of his Mexican roots, family, and friends.
